Bitter
Gourd or karela, as the name suggests is a dark green,
rough skinned vegetable, Is very bitter. But it is a
very good medicine, literally a bitter pill to swallow.
It is very rich in iron, vitamin A and B1. it is highly
recommended for its cholesterol reducing ability. Karela
is the magic vegetable for patients of diabetes. It
is known to reduce the blood sugar levels drastically.
A glass of karela juice, taken early in the morning
is good for diabetics and also cures acne. A pinch of
salt can be added to the juice to reduce the bitter
taste.
- It cleanses the stomach and the alimentary canal
and purifies the blood. It is beneficial for patients
of anaemia.
- It improves vision and aids memory and concentration.
It increases the count of red blood corpuscles and
the level of haemoglobin in the blood.
- A glass of karela juice every morning improves
blood circulation and reduces blood sugar. If the
stomach is upset, then the routine should be discontinued.
- Take about 12 medium sized bitter gourd and scrap
them to remove the rough skin. Marinate with salt
and leave in the sun for five to six hours. Chop into
slices and cook along with fried onions and chillies.
They could even be finely chopped and then cooked
on low heat to make karela kachri.
