Cumin
seeds (jeera) form an integral part of any kitchen's
spice rack (masala daani). They are used to flavor curries,
curds and chutneys. It is a popular ingredient in curan
because of its digestive properties. It aids digestion
and reduces flatulence.
It also checks obesity. Cumin is used to treat liver
and urinary problems. It cures diarrhoea.
- Cumin powder serves as an excellent additive in
raitas and chutneys. Take about 100 gms of cumin seeds
and roast for a few minutes on a red hot tawa. Keep
tossing till they turn blackish-brown. Cool and grind
in a mixer. Store in a jar.
- Grind equal quantities of cumin seeds and dry ginger.
Mix salt, sugar and water to make a paste. Roll into
small balls. Store this churan into a small plastic
or glass bottle.
