It is a popular ingredient in pickles and salads. It can be had raw or cooked. It acts as a digestive. It is used while cooking vegetables like cauliflower, black gram and lentils as it reduces flatulence. It cures respiratory disorders, fatigue and dizziness.   • Ginger soda: Take 250gm ginger, the juice of two lemons, salt and sugar according to taste. Mix in a blender. Strain out the juice and fill in a bottle. The concentrate can be mixed with fresh soda or water. It is refreshing and gives instant energy.
  • Finely slice a few pieces of ginger stem. Slit fresh, green chillies and add to the ginger along with salt and vinegar. Can be eaten as a salad or preserved as a pickle.
