Chillies
Green
chillies, whether chopped, sloced or blended can pep
up chutneys, masalas, vegetable gravies and soups. Finely
chopped chillies can also be sprinkled over rice, biryani,
cooked vegetables and salads. Apart from giving a tasty
flavor, their fresh, green color makes the dish look
very attractive.
Green chilly is a rich source of Vitamin A and C. it
improves blood circulation and makes one alert. It aids
the peristaltic movement of the alimentary canal. It
tones up the digestive system. It is very good for the
eyes and prevents night blindness.
Green chillies improve the body's resistance and
increase the level of haemoglobin in the blood.
Chillies should be avoided in case of acidity and
ulcers.
- Clean and dry about 250 gm of green chillies. Slit
them lengthwise and scrape off the heads. Take 250
gm of fresh ginger and cut into two inch pieces. Add
2 tsp. of salt and a dash of sugar. Mix the contents
in a bowl. Add vinegar. Pour into a glass jar. Take
care to ensure that the ginger and chillies are immersed
fully in the vinegar to prevent fungal infection.
Keep in the sun for 2 days. This is a tasty and nutritious
pickle. It aids digestion while adding zing to your
food.
- A vegetable made just from green chillies sounds
unbelievable but it is tasty and tangy. Slit about
250 gm of green chillies and stuff with a masala made
from salt, garam masala, amchoor and dry dhania powder.
Take a kadai or shallow pan and heat 2 tbsp. of cooking
oil. When hot, add the stuffed chillies and stir for
a while. Sauté on low heat for about 15 mins.
Remove from heat and keep tightly covered for a while.
