| Rava Dosa
Ingredients:
1. 1 cup fine soji (semolina)
2. 1/2 cup rice flour or plain flour
3. 1 tbsp. oil
4. 1/8 tsp. soda bicarb
5. 2-2 ½ cups buttermilk
6. 1 tsp. coriander chopped fine
7. 2 green chillies chopped fine
8. ginger grated
9. oil to shallow fry
10. salt to taste
Method
1. Blend all the ingredients together.
2. Add more buttermilk if necessary.
3. The batter should be relatively thin Keep aside for
20 - 30 minutes.
4. Heat griddle and pour 1 large spoon of batter on
it.
5. Spread by gently rotating the griddle.
6. Put some oil (1/2 tsp.) over dosa.
7. Lift with a spatula as for basic dosa.
8. Roll the dosa in a three-fold cylinder.
9. Serve hot with onion and/or coconut chutneys.
Makes: 10 - 12 thin dosas
Shelf life: Fresh only.
Texture: Thin with polka sized holes, not too
crisp, foldable.
